- '12 Medjool dates
- pitted'
- '1 pint vanilla ice cream'
- '1/4 cup mint leaves
- torn if large'
- 'Flaky sea salt'
- Heat 1 Tbsp
- oil in a medium skillet over medium
- Add dates and cook, turning often, until lightly browned on all sides, 4–6 minutes
- Divide dates among plates
- Add a few small scoops of ice cream to each
- Drizzle with oil, then top with mint; season with salt
