  • '12 Medjool dates
  • pitted'
  • '1 pint vanilla ice cream'
  • '1/4 cup mint leaves
  • torn if large'
  • 'Flaky sea salt'

  1. Heat 1 Tbsp
  2. oil in a medium skillet over medium
  3. Add dates and cook, turning often, until lightly browned on all sides, 4–6 minutes
  4. Divide dates among plates
  5. Add a few small scoops of ice cream to each
